Wild Blueberry Sparkling Mocktail

Ingredients
– 1 cup (250 ml) frozen wild blueberries
– 1 cup (250 ml) water
– 2 tbsp (30 ml) maple syrup
– 2 tbsp (30 ml) lemon juice
– 4 cups (1 litre) sparkling water
– A few sprigs or leaves of fresh herbs to taste (e.g., rosemary, basil, mint)
– Ice cubes, to taste
Preparation
- Place wild blueberries, water (plain, not sparkling), maple syrup and lemon juice in a saucepan. Bring to a boil. Reduce heat and simmer for 5 minutes. Mash blueberries with a wooden spoon to release more flavour.
- Pass through an electric blender to retain blueberries OR through a sieve for a clearer syrup. Refrigerate for about 1 hour to cool completely.
- In a shaker or directly in a glass, mix wild blueberry syrup with sparkling water, herb of your choice and ice cubes.
