Wild Blueberry Chicken Legs in the Air Fryer

Ingredients
8 chicken legs (drumsticks)
4 cups frozen wild blueberries
1/2 cup apple cider vinegar
1/2 cup packed brown sugar
Preparation
- In a blender, combine the wild blueberries, apple cider vinegar, and brown sugar. Blend until smooth.
- Place the chicken legs in a shallow dish and pour the blueberry marinade over the chicken legs, ensuring each piece is well coated. Cover the dish and refrigerate for at least 2 hours, or overnight for best results.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Remove the chicken legs from the marinade, letting any excess drip off. Place the chicken legs in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
- Cook for 25-30 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the chicken legs are golden brown and cooked through.
- Let the chicken legs rest for a few minutes before serving.
Tip: If you like extra sauce, reserve some of the marinade before adding the raw chicken. Heat the reserved marinade in a saucepan and simmer for 5-10 minutes until it thickens slightly. Drizzle over the cooked chicken legs.
