Wild Blueberry BBQ Sauce

Ingredients
1 ¾ cup (400 g) wild blueberries
1 tbsp olive oil
1 ½ cups (350 g) diced onions
1 ½ cups (350 g) diced peppers
1 garlic clove
1 cup (250 ml) white vinegar
1/2 cup (125 ml) honey
1 tbsp (15 ml) ketchup
1 tsp (5 ml) salt
1 tbsp (15 ml) paprika
1 tbsp (15 ml) cinnamon
1 tbsp (15 ml) ginger
1 tbsp (15 ml) mustard
1 tbsp (15 ml) nutmeg
1 tbsp (15 ml) cloves
Preparation
- Sauté onions and peppers with olive oil. Add remaining ingredients and cook at medium heat stirring constantly for 1 hour.
- Let sit until cold. Use an immersion blender to blend until smooth.
- Marinate any protein in the wild blueberry BBQ sauce before cooking.
