Spicy wild blueberry infusion
Developed in collaboration with Stéphanie Côté, RD, for wild blueberry growers.
Ingredients
- 500 ml (2 cups) water
- 250 ml (1 cup) frozen wild blueberries
- 2 star anise
- 1 piece fresh ginger, 3 cm, diced
- 1 cinnamon stick
Preparation
- Combine all ingredients in a saucepan. Bring to the boil and simmer over low heat for 5 minutes. Press the wild blueberries against the side of the pan to extract the juice.
- Strain through a sieve and press through the sieve to remove as much liquid as possible.
- Enjoy or refrigerate until needed, when you can reheat the infusion.
