Mambo Chicken With Wild Blueberry Salsa Picture New Recipe

Ingredients

For the chicken

8 boneless chicken thighs, or 4 boneless chicken breasts

1 teaspoon salt

1 teaspoon freshly ground black pepper

3 garlic cloves, minced

1 2-inch knob fresh ginger, peeled and grated on the medium side of grater

3 tablespoons soy sauce

3 tablespoons freshly squeezed lime juice

1½ tablespoons toasted sesame oil

For the wild blueberry salsa

1 cup wild blueberries (fresh or frozen)

1/2 jalapeno, or to taste, diced finely

1/2 red bell pepper, diced

1/4 cup diced red onion

1 palmful cilantro leaves, chopped coarsely

2 tablespoons freshly squeezed lime juice

1 tablespoons olive oil

A pinch of salt and pepper

Preparation

For the chicken

Season chicken with salt and pepper.

In a large bowl, combine garlic, ginger, tamari, lime juice, sesame oil

Add the chicken and turn several times to mix the ingredients.

Cover and marinate for 2 – 4 hours in the refrigerator. Turn once or twice.

Preheat grill to medium direct heat.

Grill chicken for about 5 minutes per side, or until no pink remains

For the wild blueberry salsa

In a medium bowl, combine all salsa ingredients. Use the back of a spoon to mash some of the blueberries to release their juices. Reserve.

To serve

Spoon a generous serving of wild blueberry salsa over each piece of chicken.
