Wild Blueberry Hummus
Ingredients
- 1 can (15 oz) no salt added chickpeas, drained and rinsed
- 1 cup wild blueberries
- Juice of 1 lemon
- 2 tbsp tahini
- 2 tbsp olive oil
- 1 clove garlic
- 1/4 tsp ground cumin
- 2–3 tbsp water (as needed)
- 2 tbsp crumbled feta cheese
- Fresh mint leaves, for garnish
Preparation
- Drain and rinse the canned chickpeas under cold water.
- In a blender or food processor, combine the chickpeas, wild blueberries, tahini, olive oil, garlic, lemon juice, and cumin and water.
- Blend until smooth, scraping down the sides as needed.
- Add more water if needed to reach your desired hummus consistency.
- Transfer the hummus to a serving bowl. Top with crumbled feta cheese, mint leaves and a few whole wild blueberries.
