Turkey Skewers with Wild Blueberry Honey Glaze Picture New Recipe

Ingredients

Wild blueberry honey garlic glaze

4 garlic cloves, roughly chopped
1 1/2 cups fresh or frozen wild blueberries
2 tbsp apple cider vinegar
1-2 tbsp pickle juice
1 tsp kosher salt
1/2 cup honey

Turkey and veggie skewers

1 medium red onion, halved, each half cut into 4 equal pieces
1 red or yellow bell pepper, cut into approximate 1″ cubes
8 white mushrooms, halved

Preparation

Wild blueberry honey garlic glaze

Place all ingredients in a medium pot and bring to a simmer on medium-high heat.
Reduce to low heat and allow mixture to simmer for 15 minutes, stirring occasionally.
Remove from heat and puree with an immersion blender until smooth, about 15-20 seconds.
Set aside until you are ready to marinate turkey meat.

Turkey and veggie skewers

Place turkey meat in a sealable container or ziploc bag with approximately 1/2 cup of the wild blueberry honey garlic glaze. Close and shake gently until meat is evenly coated and let marinate in the fridge for at least 2 hours before grilling.

(Note: the above step isn’t required, but you’ll end up with a more tender and tasty end result post-grilling.)

Skewer assembly and grilling

Pre-heat grill to 450 degrees.
Add pieces of marinated turkey meat to skewers (pre-soaked if using wooden skewers) with vegetables as desired. Once complete, brush each skewer liberally wild blueberry honey garlic glaze.
Place skewers on hot grill and cook for approximately 4 minutes before turning over once. Brush once more with glaze and allow to cook for 4 more minutes on direct heat.
Transfer to upper rack (or lower heat section of grill), turning over one more time and allow to cook until turkey and vegetables are lightly caramelized, approximately 3-4 minutes.
Remove from heat and let cool slightly before transferring meat and vegetables from skewers to serving platter.
